Decadent Dark Chocolate Pudding


Happy Valentine's day!  Here is a dessert for lovers, or for those who just love dessert.

I love to make pudding from scratch because it is rich enough to satisfy my sweet tooth, but it's also got some nutrition from the milk (or alternative). By making it from scratch I can control how much sugar I add, and I know that it doesn't have any added colours or preservatives.

This simple treat is made from only three ingredients, and whips up in under 15 minutes. I'm in love!


1 3/4 cup 2% milk

3 tsp corn starch

1 1/3 cup dark chocolate chips


In a small saucepan combine milk and corn starch. Stir to dissolve corn starch completely before heating the milk. Gently heat mixture over medium low heat, stirring frequently. When milk mixture thickens to the consistency of heavy cream and is almost boiling, turn off heat, but keep the pot on the burner.

Pour in chocolate chips and put the lid on the pot. Wait 60 seconds for chocolate to melt, then remove from heat and stir with a whisk until smooth. 

Pour into four small bowls. Serve warm or cold, and topped with your favourite fruit.
