Nectarine Summer Salad

One of my favourite parts of summer is the abundance of fresh fruit. I feel so lucky to live in a place where cherries, strawberries, peaches, and the like are plentiful and delicious all summer long. I love peaches but the fuzz makes my tongue feel weird, so my all-time favourite summer fruit has got to be the nectarine. I’ve been eating one every day as my afternoon snack, and I have yet to tire of it.

Fruit in salads, however, have always been iffy for me. The combo of sweet and savoury in a salad just didn’t do anything for me. That was until I discovered that

Sliced nectarines + goat cheese + tomatoes = bliss.

This salad screams SUMMER. The sweetness of the fruit balances the tanginess of the cheese. This would pair perfectly with some BBQ’d chicken and a bit (or a larger portion) of white wine. Hope you’re enjoying this lovely weather!

Nectarine Summer Salad

Ingredients

Makes 2 small-ish salads, or one big salad

1 nectarine, thinly sliced

1 cup cherry tomatoes, sliced in half

2 cups arugula

1/3 cup goat cheese, crumbled

1/3 cup lemon basil vinaigrette, or other oil-based dressing that isn’t too heavy

Directions

Combine all ingredients in a bowl and toss well to mix. Serve immediately.

If you’re making this for a take-to-work lunch, combine all of the ingredients except the dressing in a container. Then add the dressing right before you eat.
